Salad with Blueberries, Quinoa & Nuts, Topped with Apricot & Ginger Dressing

Summertime salads, don't get any more delicious then when you add fresh in-season fruit such as blueberries to them, and top them with a thick tangy dressing that is light and tantalizing made from dried apricots and fresh ginger. mmmmmmmmmmmm....

Greens, Blueberries and Nuts, Salad

Start with a bed of young Spinach or other dark greens on your plate or in your bowl.

Add a generous amount of prepared and cooled Quinoa grains to the center.

Surround the Quinoa with a large peeled and shredded carrot

Top with a generous portion of dressing. Finally, add plenty of fresh blueberries and mixed nuts.

Ginger and Dried Apricot Dressing


Cover about a 1/2 c. of dried apricots in boiling water and let rest for about 15 minutes to soften.  Place into a blender or food processor.

Add and blend:
1/2 cup olive oil
1/4-1/3 cup lemon juice
Finger size amount of chopped, fresh ginger
1 to 2 T. honey2 to 4 cloves chopped garlic
1 to 2 t. sea salt (start with 1t.)
1/2 - 1t. pepper

Remember, taste, taste, taste and savor the sensations on your tongue.  This is how you learn to put love into your food.  Adjust with more garlic/salt/honey/lemon or oil to your personal taste preference.
